CINNAMON RAISIN BREAD
TWO WAYS: REGULAR OR WITH A SWIRL
Cinnamon raisin bread is used to explain the expansion of the universe. Yes, it is. The raisins are galaxies. I will explain more in the Sack Exchange blog post for September. But for now just think, you are making a loaf of bread that connects you to the final frontier! A loaf of bread that explains it all! There is a whole galaxy within each raisin. Bread can explain everything. If you are ever in doubt, you know where to look.

INGREDIENTS:
3 1/2 cups all purpose flour,
4 teaspoons sugar,
1 1/2 teaspoon salt,
2 teaspoons dry yeast,
1 1/2 teaspoons cinnamon,
1 egg,
2 tablespoons melted butter,
1/2 cup milk,
3/4 cup water,
2 cups raisins (soaked and strained),
Additional sugar and cinnamon mix for swirl and topping loaves before baking
TWO LOAF PANS GREASED WITH BUTTER
PROCESS
- In a mixing bowl combine the flour, sugar, salt, yeast and cinnamon. 
- add the whisked egg, 2 tablespoons of melted butter, the milk and the water 
- mix with wooden spoon and hand until the dough comes together in a ball. then transfer to table to knead the dough until well developed. If you need to add extra flour due to a sticky dough feel free to do so. 
- return to the bowl and incorporate the soaked and rinsed raisins by hand slowly. Knead dough until fully dispersed. 
- place dough in a greased bowl, making sure to grease the top of the dough to so as not to get a dry skin and cover with towel. Let rest 2 hours or until double in bulk 
- Separate the dough into two equal pieces. Reshape dough into boules (watch video tutorial) 
- Let rest with towel covering for ten minutes 
- final shape the dough as shown in video. Two tecniques: plain cinnamon raisin bread or the Cinnamon raisin bread with a cinnamon sugar swirl: For the cinnamon swirl use the sugar cinnamon mix. Roll out the dough, cover with cinnamon sugar and roll it up. 
- Place shaped loaves in greased loaf pans and cover with towel 
- Let rise for two hours 
- Dust the tops of the loaves with he remaining cinnamon sugar. You can dab a bit of water on the top of the loaves if they seem dry. This will help the sugar stick. 
- Bake in a 375 degree F oven for roughly 30 minutes or until golden brown and hollow sounding when tapped on the bottom. 
- remove from oven, let cool in pans, then remove and let loaves rest on a cooling rack. 
- Enjoy immediately or even better for toast in the morning.
